Step 2Toast the coconut and almond flakes in a dry pan over medium-high heat, tossing often, for 2–3 minutes until golden. Transfer to a plate to cool.
Step 3In a small saucepan, simmer the coconut milk and almond milk over medium heat. Remove from the heat and stir in the chia seeds and coconut flour.
Step 4Stir in cinnamon, vanilla, and sweetener if using. Let sit for 5 minutes to allow the chia to bloom.
